Frittatas are so easy and a great fallback when you realize it is almost dinner time. In a bowl add:
- Between 8-12 eggs
- 3 tablespoons of dairy—whole milk (we used oat milk), cream — just not low-fat.
- Add cheese cheddar, feta, parmesan, or whatever may be your favorite cheese, maybe ham or bacon, and whatever veggies you have handy — tomatoes and spinach are in this one.
- To give it flavor, pour in about 1/2 a cup of salsa, and a grind of salt and pepper.
