Frittatas - a great fallback when in a time crunch

Frittatas are so easy and a great fallback when you realize it is almost dinner time. In a bowl add:

    • Between 8-12 eggs
    • 3 tablespoons of dairy—whole milk (we used oat milk), cream — just not low-fat.
    • Add cheese cheddar, feta, parmesan, or whatever may be your favorite cheese, maybe ham or bacon, and whatever veggies you have handy — tomatoes and spinach are in this one.
    • To give it flavor, pour in about 1/2 a cup of salsa, and a grind of salt and pepper.
Cook on the stovetop until the edges are firm and then place in a preheated 350-degree oven until the frittata stops jiggling and the top is firm. Save the leftovers for breakfast or lunch the next day.
