Monday Morning Bliss

Making the best of self-isolation. Berry muffins and a golden latte. Here’s a favorite recipe. If you don’t have all of the ingredients, it’s a good time to get creative.
 
Ingredients
1-1/2 Cups Flour
1/2  Cup Sugar
3 Teaspoons Baking Powder
1/2 Teaspoon Salt
1/4 Teaspoon Allspice
1/2 Teaspoon Cinnamon
1/2 Teaspoon Grated Lemon Rind (optional)
1 Egg
2/3 Cup Milk
1/4 Cup Melted Butter
1 Cup Berries
 
Directions

1. Preheat oven to 400. Line 8 muffin cups.
2. Mix dry ingredients together.
3. Mix wet ingredients together.
4. Add wet ingredients to dry ingredients and mix until just combined.
5 Add berries and gently combine.
6. Bake for 12 minutes at 400, then lower to 375 for 10 minutes. 9
